What makes this pepper extraordinary is patience. While most pepper is harvested green, Parameswaran allows his berries to remain on the vine until they are fully ripe and reddish — a labor-intensive process that requires multiple passes through the vines as each berry matures. After harvesting, the peppercorns are sun-dried and packaged immediately to preserve their peak flavor and aroma.
